The Parmigiano Reggiano is made at Neviano Arduini, in a cooperative cheese factory collecting milk from dairy farmers on the hills at the East of Parma. The local climate is perfect for Bruna Alpina cows. Their highly aromatic feed is made of various plant species, which gives a milk with a high content in casein, calcium and phosphorus ! The best “forme”, from 36 to 42 kilos, are delivered after a 24 to 28 month maturing process.
