It is entirely hand made in Presenzano, Campania, by Ferdinando Cozzolino. Deeply passionate about his job, he only uses milk from his own buffalos, fed with grains he grows himself. Quality and hygiene are at the heart of everything he does.
Ferdinando is the only producer in Italy who doesn’t use preservatives. His mozzarella, our mozzarella, your mozzarella is shipped by air twice a week, on Tuesdays and Fridays, and made the day before, on Mondays and Thursdays.
To appreciate all its delicacy, our advice is to taste it plain, without any seasoning. Ferdinando even says that the ideal tasting temperature is 35°C at the center of the mozzarella.
